- 4 cups fresh watermelon cubed
- 1 cup heavy cream or coconut cream for dairy-free
- ½ cup sugar or sweetener of choice
- 1 tsp vanilla extract optional
Blend the watermelon cubes into a smooth puree. Strain to remove seeds if necessary.
In a mixing bowl, whisk together the cream, sugar, and vanilla extract.
Combine the watermelon puree with the cream mixture and mix well.
Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. °No ice cream maker? Pour into a loaf pan, freeze, and stir every 30 minutes until creamy. Freeze for 4–6 hours or until firm.
